Meloni handi:

Ingredients

Carrot cut in cubes 1
French beans chopped ½ cup
Peas ½ cup
Potato cut in cubes 1
Cauliflower ½ cup
Cottage cheese 200 gm
Cashew nuts grinded 2 tbsp
Fenugreek 4 bunches
Onion 1 cup
Butter 2 ounce
Cream 2 tbsp
Oil ¼ cup
Salt 1 tsp
Chili powder 1 ½ tsp
Cumin seeds 1 tsp
Cardamom powder ½ tsp
Green chilies chopped 3
Coriander leaves chopped 3 tbsp
Garlic paste 1 tsp
Tomato puree 4 tbsp

Method

Heat oil and butter in a handi, add choti methi with onion and garlic, fry for 5 mins, add potatoes with seasonings, tomato puree and 1 cup water, cover and cook till potatoes half done, add all the remaining vegetables with half cup water, cover and cook till veggies tender, add kaju paste, cottage cheese, elaichi powder, cream, mix and remove.

Apricot trifle:

Ingredients

Plain cake 1 pound
Apricots soaked & cooked 100 gm
Milk 1 liter
Custard powder 4 tbsp
Sugar 5 tbsp
Mixed fruit cocktail 1 tin
Mango flavored dissolved 2 tbsp
Cream whipped 2 cups
Flaked almonds to garnish
Method

Make custard with milk, custard power and sugar, cool, put cake on a trifle bowl, sprinkle with tang to soak, spread with fruit cocktail, top with apricot puree, finally spread with custard, garnish with cream and flaked almonds, serve chilled.



Cheesy grilled chicken:

Ingredients

Chicken boneless ½ kg
Ginger garlic 1 tsp
Salt 1 tsp
Lemon juice 3 tbsp
Green chilies ground 6
Spinach leaves boiled 3
White pepper ½ tsp
Cream 2 tbsp
Cashew nuts grinded 1 tbsp
Cream cheese 3 tbsp
Egg 1
Cardamom powder ½ tsp

Method

Grind together boiled spinach, green chilies and cashew nuts, marinate chicken with all the given ingredients for 2 hours, put on skewers, bbq over low flame or bake in oven, give dum of coal, serve garnish with onion rings.
