Cocktail Biryani:
Ingredients:
Beef (boiled) 300 gm
Potato (boiled) 1 cup
Peas (boiled) ¾ cup
Clarified butter ¾ cup
Raisin 4 tbsp
Carrots ¾ cup
White pepper 1 tsp
Green chili paste 1 tbsp
Salt as taste
Yogurt ¾ cup
Onion (chopped) 1 large
Ginger garlic powder 2 tbsp
Mix all spice 1 tbsp
Pulao biryani masala 1 tbsp
Lemon juice 2 tbsp
For Rice:
Sela rice (boiled) ½ kg
Vermicelli ¾ cup
Saffron color 2 pinches
Butter 2 tbsp
Fried onion for garnish
Egg (boiled) 3 (for garnish)
Method:
Heat clarified butter and fry the onions. Then add ginger garlic paste, pulao biryani, white pepper, green chili, yogurt and mix all spice. Cook well. Then add beef pieces and cook properly with ½ cup water. Now add potato and peas. Mix well. Then in a pan add ½ cup water, 2 tbsp oil, half rice and prepared spice. Now add fried vermicelli, give a splash of water and add the remaining rice. In the end add carrots, raisin and saffron color, dissolved with water. Cover and cook well. Then before serving mix well and garnish with boiled eggs and fried onions.
Lauki ki kheer:
Ingredients:
Bottle gourd (shredded) 1-1/2cup
Milk 1-1/2kg
Whole dried milk 1/2cup
Cassava sago 2tbsp
Sugar 1cup
Small cardamom (powder) 1/2tsp
Pistachios, almonds (chopped) 4tbsp
Sterling Silver paper 1
screwpine essence 3-4drops
Clarified butter 2tbsp
Method:
Firstly boil milk and add boiled rice and set it to cook.now in a pan add clarified butter and graded bitter gourd and fry them also add small cardamom. Then add the milk and rice’s mixture. After that add Cassava sago and mix it thoroughly. Then add sugar and whole dried milk and cook it till the kheer thickens and in the end add screwpine essence. Lastly set the kheer in a dish and garnish it with chopped almonds and pistachios and spread silver paper over it.
