Karishmiri Mutton Ribs

Ingredients:
Mutton ribs 250 gm
Cinnamon 1 piece
Cardamom 4-5
Bay leaf 1
Fennel powder ½ tsp
Dry ginger powder ½ tsp
Salt as required
Turmeric powder ½ tsp
Garlic (crushed) 1 tbsp
Asafoetida 2 pinches
Milk ½ cup
Kashmiriu chili powder 1 tsp
Clarified butter ½ cup

Method:
In mutton ribs mix all the above ingredients. Cook well until the ribs get tender. Once it is done, serve hot.

Yogurt Cucumber Dip

Ingredients:
Yogurt 250 gm
Cucumber (grated) ½ cup
Salt as taste
Cumin powder ½ tsp
Sumac 1 tsp

Method:
Whisk yogurt well. Then add salt, cumin powder and grated cucumber. Mix well. In the end add sumac and serve.

BEEF NALLI Biryani
Ingredients for meat:
Beef mince 750 gm
Beef nalli 3-4
Chopped onion 250 gm
Yogurt ¾ cup
Lemon juice 1 lemon
Ginger garlic paste 2 tbsp
Salt as required
Black pepper as required
Turmeric as required
Dried plums 8-10
Green chilies 10-12
Mint ½ bunch
Clarified butter 1 tsp
Ingredients for rice
Boiled rice 600 gm
All spice 1 tbsp
Yellow food color 2 pinch
Clarified butter 4 tbsp
Biryani essence few drops
Fried onion as required
Method:
Heat ghee and fry onion. Add ginger garlic paste, tomato, salt, black pepper and turmeric fry well.
Add beef and nallian fry well. Add enough water to tender meat. When it done remove nalliayan. Add yogurt and dried plum cook well. Add mint, green chilies, lemon juice, all spice powder and remove ghee. Add rice on meat mixture then add dissolved food color. Add remaining ghee, biryani essence and simmer. Dish out garnish with nalliyan and fried onion, serve.
