Ingredients:
3 Potatoes, chopped
1/2 Cup Coconut
4 Green Chillies
1/2 inch Ginger
2 Cups Water
3 tbsp Curd
1/2 Cup Peanuts, soaked
1 & 1/2 tbsp Oil
1 tsp Cumin Seeds
Rock Salt
Coriander leaves
Method:
- First in a mixer grinder add grated fresh coconut, green chillies and ginger. Add little water and grind everything to a paste. Keep this masala paste aside.
- In a pan heat some oil.
- Add cumin seeds, chopped potatoes & peanuts. Mix everything.
- Add the masala paste & rock salt. Mix well.
- Add water and cover it with a lid. Let the potatoes cook properly.
- Then add the curd and coriander leaves. Mix well.
- Again cover it with a lid and let the bhaji simmer for 2 minutes.
- Upvas Batata Rassa is ready to be served.
