Exchange the rice in risotto with quinoa. Add some soy cream in it, and you get the tastiest vegan meal ever!
Ingredients:
- 2/3 cup white quinoa
- 2/3 cup red quinoa
- 1 onion
- 7 ounces mushrooms
- 3/4 cup soy cream
- olive oil
- 1 stock cube
- 2 cups water
