Chicken Enchiladas Recipe | Enchiladas Sauce | How to make chicken enchiladas

Welcome to MJ's Kitchen.
Today I'm sharing recipe of Chicken Enchiladas
with Enchiladas Sauce

Ingredients for Chicken marination:
500 gram Chicken Breast,
½ tsp Black Pepper,
1 tsp Chili Powder,
½ tsp Cumin (roasted & crushed),
1 tsp Garlic Powder,
1 tsp Salt,
2 tbsp Vinegar,
& 2 tbsp Vegetable Oil.

Ingredients for Sauce:
2~3 tbsp vegetable,
½ cup Onion (chopped),
1 tbsp Garlic (crushed),
4 Tomatoes,
½ tsp Salt,
½ tsp Chili Powder,
½ tsp Black Pepper,
½ tsp Cumin (roasted & crushed),
1 tsp Oregano,
1 tsp Paprika Powder,
1 tbsp Vinegar,
& 1 tsp Sugar.

for Assembling:
Tortillas,
Mozzarella & Cheddar Cheese.

Method:
- First of all marinate the chicken by adding all the ingredients in a bowl & mix.
- Add chicken breast, black pepper, chili powder, cumin, garlic powder, salt, vinegar & vegetable oil in a bowl.
- Give it a mix & let it marinate for 20 minutes.
- Cook the marinated chicken at medium flame until done.

- To prepare sauce, turn on flame & add oil to the pan.
- Add onion, garlic & fry for couple of minutes only.
- Add tomatoes after onion softens.
- Add salt, chili powder, black pepper, cumin, oregano, paprika, sugar & a little water.
- Give it a mix, cover & let it cook for 10 minutes at medium flame.
- Add vinegar after 10 minutes & mix.
- Cook for a couple of minutes and turn off flame.
- Let the sauce cools down & then blend it to make smooth paste.

- For assembling take a tortilla, put cooked chicken, a tablespoon of sauce & some cheese.
- Roll it to make the wrap.
- Make a layer of sauce in an oven proof dish.
- Put tortilla wraps in it.
- Pour sauce all over and top it with cheese.
- Bake for 20 minutes at 180°C.
