Bihari Boti:
Ingredients
Undercut 1kg
Onion fried ½ cup
Lemon juice 2tbsp
Papaya paste 2tbsp
Oil 2tbsp
Red chili whole 50gm
Cumin 50gm
Coconut powder 50gm
Poppy seeds ground 50gm
Salt 1tsp
Meat tenderizer 1tbsp
Black pepper 1tbsp
Carom 1tbsp
All spice 1tbsp
Nutmeg/mace ½ tsp
Method
Grind cumin , red chilies ,carom nutmeg and mace , now add in salt , kachri powder , red pepper, coconut ground, poppy seeds ground , and all spice powder mix it well.now add undercut , fried onions, lemon juice , lemon juice , papaya paste , oil and mix , lastly put them on skewers then bake ot barbeque and serve.
Hyderabadi Pasanday:
Ingredients
Beef fillet 1kg
Onion fried 250gm
Yogurt 250gm
Green chilies 6
Oil ½ cup
All spice 1tsp
Turmeric ½ tsp
Nutmeg ground ½ tsp
Cumin 2tsp
Red chili powder 2tsp
Coriander powder 2tsp
Ginger garlic paste 2tsp
Ginger 1tbsp
Sesame seeds 1tbsp
Coconut powder 1tbsp
Peanuts 1tbsp
Coriander 2tbsp
Salt as required
Method
On skillet roast coconut ground, peanuts and cumin , now marinate fillet with coconut mixture , turmeric, red pepper, coriander powder , ginger garlic paste , fried onion , nutmeg , yogurt , all spice powder and salt marinate it about 30 min , now heat oil add fillet cover and cook on medium flame , lastly garnish with green chilies , coriander and ginger .
