Navratan pulao is a one-pot meal. It is very easy to prepare with basmati rice, green peas, cauliflower, paneer, potato, carrots, dry fruits and few Indian aromatic spices. Ghee not only gives it a mouth-drooling aroma but also enhances its taste.
You can prepare it for your guests at any get-together. Your friends and family can never have enough of this pulao. Even your kids will keep asking for more and more. Navratan pulao is rich in taste and keeps your tummy full for long hours.

Ingredients:
4 tbsp Oil
1 Potato (cube)
1/2 Paneer (cube)
8-10 Cashewnuts
8-10 Almonds
15-20 Raisins
2 Onions (sliced)
2 Black Cardamom
4 Green Cardamom
2 Star Anise
1/2 Black Pepper
1/2 tsp Cloves
2 Cinnamon Stick
1 tsp Cumin Seeds
1 tsp Ginger (crushed)
1/2 cup Cauliflower
1/2 cup French Beans
1/2 cup Carrot
1/2 Green Peas
1 tsp Garam Masala
Salt
1 1/2 cup Rice (cooked)
Method: Let's start with heating up the Oil in the Pan, with Potato (cube) fry till it turns a golden colour and takes it out in the plate. Now, let's fry the Paneer (cube) same as Potato fry till it turns golden as well, and take it out in the plate. Now fry Cashewnuts with Almonds, Raisins till it turns golden and then takes it out in the plate. Now add Onions (sliced) fry it till it turns brown, once it is turned brown then keep the onion on one side and oil on the other side of the pan and add Black Cardamom, Green Cardamom, Star Anise, Black Pepper, Cloves, Cinnamon Stick, Cumin Seeds, Ginger (crushed), in the Pan. Mix them all together properly then add Cauliflower, French Beans, Carrot, Green Peas, Garam Masala mix them all and all fry items including Potato, Paneer, & Cashewnuts. Mix it together and add Salt, then finally add Rice (cooked). Close the lid and let it cook for 5 mins on low flame, after that take it out in the serving plate and your Navratan Pulao is ready to be served.
