BRAIN MASALA 1
INGREDIENTS:

buffalo brain (maghaz ) 1
oil 1/2 cup
onion 1 med fine chopped
tomato 1 large chopped
fresh coriander 1/4 cup
green chilies 2 chopped
ginger 1 inch sliced
yogurt 4 tbsp
dry feneugreek leaves 1 tsp
carom seeds 1 tsp
red chili pwd 1 tsp
B.pepper pwd 1/2 tsp
salt 1 tsp
turmeric 1/2 tsp
coriander pwd 1 tsp
cumin pwd 1 tsp
garam masala pwd 1/2 tsp
ginger garlic paste 1 tsp each
METHOD:
first slightly fry onion ,when the edges get fried add G.G paste and all spices.
mix and add 1/4 cup water to cook the spices properly.
when oil comes out on top add tomatoes with 1/2 cup water.
cover the lid and cook it on med low flame.
when tomatoes become a paste add brain and ginger sliced in it.
add 1/4 cup water mix and cover the lid.
cook it 10 minutes on low flame,brain will cooked in 10 minutes.
add feneugreek leaves and yogurt.
mix and cook on high flame.
when oil comes out on top add green chilies and squeeze 1/2 lemon on top.
sprinkle fresh coriander and simmer 2 mins.
serve with naan.
