Palak Corn Subzi

The Palak Corn Subzi is a mellow preparation of nutrient-rich spinach and sweet corn. These two star ingredients complement each other well not just in flavour and texture, but in looks too. The corn kernels look like shiny pearls laid on bright green silk, kindling one's appetite both through the aroma and the visual appeal.

Preparation time: 15 minutes. Cooking time: 4 minutes. Serves: 3.

2 cup spinach (palak) purée
1 cup boiled sweet corn kernels (makai ke dane)
1 tbsp oil
2 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1 tsp grated ginger (adrak)
Salt to taste


For serving
Rotis/ parathas/ bajra roti

1. Heat the ghee in a non-stick kadhai
2. Add the garlic, green chillies and ginger and sauté on a medium flame for 1 minute.
3. Add the spinach puree, spinach, corn, salt, ¼ cup of water, mix well and medium flame for 2 to 3 minutes. Serve hot with hot Rotis or parathas or bajra rotis
