Ingredients
-oil
- 1 eggplant
- 2 tsp of chopped ginger
- 2 chopped onions
- 4 chopped tomatoes
- 1 tsp of salt
- 1 tsp of red chilli powder
- 1 – 1 1/2 cup of green peas
- 1/2 tsp of coriander powder
- 1/2 tsp of cumin powder
- 2 green chillies
- coriander leaves
Method
- Turn on the flame
- Apply some oil on the eggplant
- Roast the eggplant on the flame
- Once done keep it aside in a plate and let it cool
- In a pan add some oil, ginger and fry it properly
- Add chopped onions let it cook until they turn slight pink then add tomatoes, salt, red chilli powder and mix everything properly
- Turn the flame on low heat and add green peas and let the masala cook
- Keep the roasted eggplant in water and remove it's skin and then cut the eggplant into several pieces
- Add the mashed eggplant into the masala and mix well
-Cook on low flame for 10 minutes
- Add coriander powder, cumin powder, green chillies and coriander leaves and mix everything.
- Baingan Ka Bharta is ready to be served.
