Recipe for: Asian Spicy Lamb & Cumin
Ingredients:
400g Lamb Fillet
1 Onion
2 Cloves Garlic
1cm Ginger
5 Stems Coriander
1 Tbsp Chilli Flakes
1 Tbsp Cumin Seeds
2 Tbsp Unsalted Roasted Peanuts
3 Tbsp Cornflour
1 Tbsp Soy Sauce
Salt to Taste
Methods:
1. Finely chop the ginger, garlic and coriander
2. Cut the onion into small cubes
3. Cut the lamb into small cubes, place into a mixing bowl and toss with cornflour
4. Heat 1 litre of oil in the wok until smoking hot
5. Place the lamb into the wok and deep fry for 3 minutes, remove from oil and drain
6. Heat 1 Tbsp oil in the wok
7. Add the chilli flakes, cumin seeds, peanuts, garlic, ginger and onion. Fry for few seconds until fragrant
8. Add the lamb, soy sauce, salt to your taste – stir fry for 2 minutes
9. Add coriander and stir
10. Transfer onto a dish and serve
