Recipe for: Thai Green Curry
You will have to try it to love it!
Ingredients:
500g chicken breasts
2 lime leaves
Half a lime
Small bunch of fresh coriander
2 spring onions
1 green chilli
1 tbsp grated palm sugar
400ml coconut milk
2 tbsp peanut oil
1 tsp fish sauce
For the paste, you’ll need:
1 clove garlic
2 tsp ground cumin
2 tsp ground coriander
1 tsp shrimp paste
1 lemon grass
1cm galangal
8 green chilli peppers
4 green chillies
4 spring onions
2 lime leaves
1 tbsp peanut oil
Small bunch of fresh coriander
Method:
Thinly slice the chilli peppers…chillies…and garlic
Finely chop galangal…lemon grass…and lime leaves
Chop spring onions…coriander
Place all of these onto a dish for making green curry paste
Slice the other 2 spring onions
Roughly chop coriander…slice 1 green chilli
Place these on another dish for later
Slice chicken into thin slices…..place on a dish for later
Now you're ready to start cooking
Toast ground cumin and coriander in a pan on medium heat for 2 minutes until fragrant
Remove and place on a dish
Place the chopped ingredients for the paste into food processor
Add the toasted powders…the shrimp paste
Blend for 2 minutes
Add peanut oil and blend for further 5 minutes until it has formed into paste
Place paste on a dish for later
Heat 2 table spoon of peanut oil in a pan
Add chicken
Fry on a high heat for 5 minutes and remove from heat
Heat wok on medium heat
Add in the paste and fry for 2 minutes until fragrant
Add coconut milk and stir
Tear the lime leaf and add into the wok
Add the fried chicken
Add palm sugar
Squeeze lime juice into the wok and stir
Place lid and simmer for 5 minutes on a low heat
Add fish sauce, coriander… and stir
Place the lid back to the wok and simmer for further 2 minutes
Transfer onto a dish, garnish and serve
