Learn how to make tasty Konkan style Kombadi Vade recipe from our chef Archana on Ruchkar Mejwani. Kombadi Vade (Chicken & Puri) is a type of Chicken Curry which is popular all over Maharashtra.

Ingredients:

For Chicken Curry:

500 gms Chicken
1 Cup Coconut Milk
1 tbsp Ginger Garlic Paste
1/2 tsp Turmeric Powder
1 tbsp Mix Masala
2 tbsp Oil
1 inch Cinnamon
4 Cloves
10-12 Black Pepper
1 tbsp Coriander Seeds
1 tbsp Poppy Seeds
2 Onions, chopped
1/2 Cup Grated Coconut
2 tbsp Oil
Water

For Vade:

4 tbsp Urad Dal
1 tbsp Cumin Seeds
10-12 Fenugreek Seeds
2 Cup Rice Flour
1 Cup Gram Flour
1 Cup Wheat Flour
1/2 tsp Turmeric Powder
2 tbsp Oil
Salt taste
Water
Oil for frying

Method:

To Make Chicken Curry
- Marinate the chicken pieces with ginger garlic paste, turmeric powder, mix masala & salt. Keep it aside for sometime.
- In a pan heat some oil. Add cinnamon, cloves, clack pepper, coriander seeds, poppy seeds, onions & grated coconut.
- Saute everything for sometime.
- Transfer it into a mixer grinder. Add little water and grind everything to a smooth paste. The masala paste is ready.
- To make the gravy in a pan heat some oil. Add the masala paste & marinated chicken. Add water & let everything cook for 15-20 mins on a medium flame.
- Add coconut milk & let everything simmer.
- Chicken is ready.

To Make Vade
- Soak the urad dal, cumin seeds & fenugreek seeds overnight in water. Next day grind everything to a smooth paste.
- In a large bowl add rice flour, gram flour, wheat flour, turmeric powder, the paste,oil & salt. Mix everything.
- Add little water and make a soft dough.
- Make small size balls of the dough.
- Flatten the balls on plastic sheet.
- Deep fry the vada in hot oil till golden brown spots appear.
- Enjoy the delicious Kombadi Vada.
