The Italian region of South Tyrol enjoys a mild climate which provides a generous supply of herbs. Jörg Trafoier, who runs a restaurant in Castelbello, is proud of his herb garden. His recipes are based on both Austrian and Italian cuisine and he only serves fresh produce.
