The first thing is, you always want to start with whole spices. You get maximum flavor because the oils have not gone rancid and the flavors from the spices are in the oil. What I have here is beautiful, whole coriander seed and the next step is then you actually want to wake up the flavor in those oils. What you want to do is toast your spices. I have my cast iron skillet here and on a low to medium flame, I am just going to toast the spices. No oil in the pan, just the product, just the spices. And you want to just start to smell the nutty aroma. That is how you know you are waking up the flavors. And you want to be cautioned not to burn. You do not want to burn spices. Once you get a nice aroma, the next step is then to grind the spices. You have the classic mortar and pestle and you just sing a little song and grind a little bit. It is very easy to do. The quick trick that I use is the coffee grinder, this works beautifully as a spice grinder. And after that, the best way to store those spices is to actually put them in a glass jar with a tight lid, so air is not going to get to the spices. And you just use as much as you need. Do not grind too much for a month. That is it. That is the best way to maximize flavors from spices.
