✍ **INGREDIENTS:**
- 6 raw bananas (6 कच्चे केले)
- 500 grams all-purpose flour (500 ग्राम मैदा)
- 1/2 teaspoon carom seeds (1/2 चम्मच अजwain)
- 1/2 teaspoon salt (1/2 चम्मच नमक)
- 100 grams ghee (100 ग्राम घी)
- Chopped fresh coriander (कटी हुई हरी धनिया)
- 2 tablespoons mustard oil (2 टेबल स्पून सरसों का तेल)
- 1 teaspoon cumin seeds (1 चम्मच जीरा)
- 1 teaspoon fennel seeds (1 चम्मच सौंफ)
- 2-3 green chilies, finely chopped (2-3 हरी मिर्च)
- 2 onions, chopped (2 प्याज)
- 1 teaspoon ginger-garlic paste (1 चम्मच अदरक-लहसुन का पेस्ट)
- 1/2 teaspoon turmeric powder (1/2 चम्मच हल्दी पाउडर)
- 1 teaspoon garam masala (1 चम्मच गरम मसाला)
- 1 teaspoon red chili powder (1 चम्मच लाल मिर्च पाउडर)
- 1 teaspoon salt (1 चम्मच नमक, adjust to taste)
- Chopped fresh coriander for garnish (ताजे धनिया पत्ते)
**Instructions:**
1. Boil the bananas in a pressure cooker until soft, then mash and set aside.
2. Prepare the dough by mixing flour, carom seeds, salt, ghee, and water. Let it rest.
3. Sauté cumin seeds and fennel seeds in mustard oil, then add chopped chilies, onions, and ginger-garlic paste. Cook until fragrant.
4. Add turmeric, garam masala, red chili powder, and the mashed banana mixture. Cook until well combined.
5. Shape the dough into balls, roll out, add the filling, fold, seal, and flatten.
6. Fry the kachoris in hot oil until golden brown and crispy. Drain on paper towels.
