Each sparkling wine gets its individual flavor from the selection and composition of the grape varieties used. There are three basic methods of sparkling wine production: tank fermentation, bottle fermentation using the transvasier method, where the wine is first fermented in a bottle and then, when it is mature, transferred to a "new" bottle for the connoisseur, and the "traditional method", where the sparkling wine matures in the same bottle throughout the entire fermentation process. The sparkling wines from Schloss Wachenheim are produced exclusively using the traditional method of bottle fermentation.
