This blew my mind how good it was. I had never tried to make sushi before, so even though it didn't look pretty, it was amazing..

Instructions:

- use a peeler to cut up cucumber strips - lay out a plastic wrap

- layer the cucumber strips overlapping

- dry them out with paper towels

-layer your topping faves. I did:

- greek yogurt (you may utilize cream cheese or another alternative or skip it)

- 1 ripe avocado

- smoked salmon, sushi grade salmon, crab meat or other alternatives can be used

option of rice.

- carefully roll, cut and enjoy
