Sausage meatballs
Serves four
Ingredients
Meatballs
8 sausages
1 Tbs tomato puree
Salt and pepper
1 Tbs oregano
Sauce
1 Tbs oil
1 chopped onion
8 thickly sliced mushrooms
4 thickly sliced tomatoes
3 cloves garlic crushed.
1 Tbs oregano
2 Tbs balsamic vinegar
Splash water
Salt and pepper
Method
Squeeze the sausage meat out of the skins and mix it with the puree, oregano and salt and pepper.
Form into balls the size of a walnut. Heat a frying pan with the oil and brown the meatballs well.
Remove them to a plate.
Gently cook the onion in the pan for a few minutes and then add the mushrooms. Cook this for a
few minutes and then add the tomatoes, garlic, and oregano. Allow everything to wilt down and
then return the meatballs to the pan. Cook for about fifteen minutes making sure to stir. Add the
balsamic and a bit of water to loosen. Season with salt and pepper.
Serve with mashed potatoes, polenta or pasta.
