✅ Ingredients:
• 4 apples
• sugar – 7 oz / 200 g
• 3 eggs
• vegetable oil – 3 fl oz / 80 ml
• vanilla yogurt – 4,5 oz / 130 g
• corn starch – 3 oz / 80 g
• all-purpose flour– 9 oz / 250 g
• baking powder – ½ oz / 16 g
• vanillin – ¼ tsp
• corn starch – 1 tsp
• water – ½ cup / 125 ml
• sugar – 2 oz / 50 g
• vanillin – ¼ tsp

• springform pan Ø10 in / 26 cm
• bowl
• oven
• blender or whisk
• carving board
Preparation:
1. Crack 3 eggs into a bowl and beat with a blender until frothy.
2. Add 7 oz / 200 g of sugar, the yogurt, vegetable oil, ¼ tsp of vanillin and keep beating.
3. Add 3 oz / 80 g of corn starch, baking powder, gradually wheat flour and beat until smooth.
4. Peel the apples, remove the cores and cut 2 of them into wedges and 2 into small dices.
5. Add the diced apples into the pastry and stir.
6. Brush a springform pan with the vegetable oil and dust with 1 tbsp of flour.
7. Lay out the pastry into the pan.
8. Arrange the apple wedges around a circle.
9. Preheat oven to 350°F / 180°C and bake the charlotte for an hour.
10. Meanwhile prepare a glaze that will add sweetness and make the pie’s surface mouth-watering and glossy. In a saucepan incorporate 1 tsp of corn starch and ½ cup / 125 ml of water, add 2 oz / 50 g of sugar, ¼ tsp of vanillin and bring to a boil, boil for about 1-2 minutes over low heat until light thickness.
11. Take the sponge charlotte out of the oven, let it cool a bit and brush with the glaze, leave for some minutes and serve to the table.
