Cook German Linsensuppe, a lentil soup with sausage - mouth-watering, hearty and hot. You’ll need not so much time to cook it and your dinner will be very tasty.
✅ Ingredients:
• sausage or hot dogs – 7 oz /200 g
• smoked brisket or bacon – 5 oz /150 g
• red lentil – 7 oz /200 g
• potato – 10,5 oz /300 g
• onion – 3 oz /100 g
• carrot – 3 oz /100 g
• celery stalks – 3 oz /100 g
• garlic – 2 cloves
• apple vinegar – 2 tbsp
• 2 bay leaves
• ground nutmeg – ⅛ tsp
• water or broth – 4 qt /2 l
• sugar – 1 tsp
• ground black pepper – ½ tsp
• salt – to taste

• saucepan or stockpot
• carving board
Preparation:
1. Cut the brisket and sausage into bars, potato into dices and dice the onion, carrot and celery finely.
2. Rinse the lentil in cold water several times and drain.
3. Heat a saucepan over medium heat and fry the brisket for 3 minutes, then add the chopped sausage and fry for another minute over medium heat.
4. Add the onion, carrot and celery and fry over medium heat for 3 minutes stirring constantly.
5. Add then the minced garlic and fry for a minute.
6. Add the potato, lentil, 4 qt /2 l of water or broth, bring to a boil and skim the froth.
7. Reduce the heat to low, add 2 bay leaves, stir and cook with the lid covered for 15 minutes.
8. Then add the apple vinegar, sugar, ground black pepper and salt to taste, stir and cook for another 3 minutes over low heat.
9. Add the ground nutmeg, stir well, switch the heat off and leave for 15 minutes.
10. Serve the lentil and sausage soup hot having sprinkled with chopped fresh greens.
Advices:
1. Red lentil can be changed for yellow. If you have green or brown lentil, cooking time should be increase.
