Mutton meat – 500 grams INGREDIENTS FOR GRAVY PREPARATION ================================
Cumin Seeds (Jeera) – 1 tsp
Bay Leaf (Tejpatta) – 1 nos
Mace (Javitri) – 1 nos
Star Anise (Star Phool) – 1 nos
Cloves (Laung) – 4 to 5 nos
Black Peppers (Kaali Mirch) -8 to 10 nos
Black Cardamom (Badi Ilayachi) – 2 nos
Cinnamon Stick (Dalchini) -1 stick
Nutmeg (Jaifal) – ¼ tsp (crushed)
Whole Red Chillies (Sabut laal mirch) – 2 to 3 nos
Onions (Pyaz) – 2 nos, medium sized (roughly diced)
Green Chillies (Hari Mirch) – 4 nos
Coriander Leaves (Hara Dhaniya) – ½ cup
INGREDIENTS FOR FRIED ONIONS
=================================
Onion (Pyaz) – 1 nos, medium sized (thinly sliced)
Oil for fry
INGREDIENTS FOR MUTTON KORMA PREPARATION ========================================
Cinnamon Stick (Daalchini) -1 small stick
Green Cardamom (Chhoti Ilayachi) – 3 nos
Bay Leaf (Tej Patta) – 1 nos
Salt (Namak) – 1.5 tsp (to taste)
Beaten curd (Dahi) – 1 bowl
Ginger Garlic Paste (Adrak Lahsun Paste) – 2 tsp T
urmeric Powder (Haldi Powder) – ¼ tsp (Optional)
Red Chilli Powder (Laal mirch powder) – 1.5 tsp (to taste)
Coriander Powder (Dhaniya Powder) - 2 tsp
Dry Fruits Paste
FOR DRY FRUITS PASTE –
Grind below dry fruits to make a fine paste and keep aside.
Cantaloupe Seeds (Magaz) – 1 tsp
Cashew Nuts (Kaaju) – 10 to 12 nos
Coconut Powder (Nariyal Choora) – 1 nos
Poppy Seeds (Khas Khas or Post) -1 tsp (Soak in water for 5 minutes before grinding Fried onions
