Eggless Banana Muffins
Servings - 3 - 4
INGREDIENTS
Mashed bananas - 225 grams
Sugar - 125 grams
Water - 80 milliliters
Butter - 90 grams
Lemon juice - 2 teaspoons
Vanilla extract - 1/2 teaspoon
Wheat flour - 350 grams
Cinnamon powder - 1/2 teaspoon
Baking soda - 1/2 teaspoon
Salt - 1/2 teaspoon
Chocolate chips - for garnishing
PREPARATION
1. In a mixing bowl, add 225 grams mashed bananas, 125 grams sugar, 80 milliliters water and whisk it well.
2. Add 90 grams butter, 2 teaspoons lemon juice, 1/2 teaspoon vanilla extract and whisk it again.
3. Now, add 350 grams wheat flour, 1/2 teaspoon cinnamon powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt and mix everything until combined.
4. Scoop off small amounts of batter with a ladle or a ice cream scoop to all the liners.
5. Top them with chocolate chips.
6. Preheat the oven to 340°F/170°C. Bake for 18 - 20 minutes.
7. Serve.
