INGREDIENTS
-Whitefish (I'm using cod)
-1 cup of flour
-1 bottle of beer (around 1- 1 1/2 cups)
-2 Tbsp paprika
-Lemon
-Veg oil for frying
AIOLI
-1/4 cup mayo
-Juice of half a lemon
-Fresh dill
METHOD
-Combine flour, paprika & beer
-Whisk until smooth (should be like a pancake batter)
-Cut fish into strips and lightly dust with flour
-Dip fish into batter then gently place in hot oil (The oil should be around 350 deg, you can leave it on the stove at medium for around 10 mins to achieve this temp. You can see if the oil hot enough to fry by dropping some batter in. It should instantly begin to bubble up)
*You don't have to deep fry this either, you can have a pan with about an inch or two of oil and achieve a similar result.
-Allow fish to fry, when it is finished it will float to the surface
-Drain off excess oil on a cooling tray or on a plate w/ some paper towels
- Serve w/ simple aioli
