Fish Burger:
Ingredients:
Fish fillets ??????
Flour 1 cup
Baking powder 1 tsp
Corn flour 1 tbsp
Extra corn flour to dust
Turmeric powder 1 tsp
White wine vinegar 1 tbsp
Ice cold water /white drink 300ml
Oil for deep frying
Burger buns 4
Butter 1 tbsp

Ingredients for Tartar Sauce:
Mayonnaise 1 cup
Mustard 1 tsp
Chopped parsley 2 tbsp
Chopped gherkins 2 tbsp
Chopped spring onion 1
Chopped capers 1 tbsp
Peas 1 cup
Mint 2 tbsp
Butter 1tbsp
Method:
Mix together all the tartar sauce ingredients and season with salt. Chill. Boil the peas in salted water for 1 minute, drain, and then tip into a food processor. Add the butter, mint and seasoning, and pulse until mushy. Mix the flour, baking powder and corn flour, add in turmeric with the white wine vinegar and cold water and to make a batter and season well. Heat oil. Dust the fish pieces lightly with some extra corn flour, and then dip into the batter. Lower into the oil and fry until crisp and golden. Drain on kitchen paper. To assemble, dollop some mushy peas on the base of each toasted and buttered burger bun, top with the fish then some tartar sauce, top with the top bun and serve immediately.

Moist chocolate cupcakes:
Ingredients:
Flour ¾ cup
Cocoa powder ½ cup
Baking powder ¾ tsp
Baking soda ½ tsp
Salt ¼ tsp
Eggs 2
Caster sugar ½ cup
Brown sugar ½ cup
Oil 1/3 cup
Vanilla essence 2 tsp
Buttermilk ½ cup
Sprinkles to decorate
Method:
Whisk the flour, cocoa powder, baking powder, baking soda, and salt in a bowl; beat the eggs, caster sugar, brown sugar, oil, and vanilla together until completely smooth. Pour half of the wet ingredients into the dry ingredients. Then half of the buttermilk. Gently whisk for a few seconds. Repeat with the remaining wet ingredients and buttermilk. Do not over mix. The batter will be thin. Pour the batter into the liners. Fill only halfway to avoid spilling over the sides or sinking. Bake at 180 degrees C for 18-21 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting. Frost cooled cupcakes with the chocolate butter cream. Top with sprinkles.

Chocolate Butter cream :
Ingredients:
Unsalted butter 1 cup
Icing sugar 3-½ cups
Cocoa powder ½ cup
Cream or milk 3 tbsp
Salt ¼ tsp
Vanilla essence 2 tsp
