Carrot Coconut Milk Halwa:
Ingredients:
Carrot (grated) 1 kg
Clarified butter 6 tbsp
Coconut Milk 2 cups
Sugar ¾ cup
Green Cardamom Powder ½ tsp
Cashew Nuts as required
METHOD:
Heat ghee add grated carrot, cardamom powder and cook on low flame. Now add coconut milk and cook until dries the milk. Then add sugar and cook. After this and fry. In the end, take it out. Garnish with cashew nuts and serve.

Fried Fish Biryani:

Ingredients for fish:
Fish ½ kg
Ginger garlic paste 2 tbsp
Salt, chili, turmeric as required
All spice powder 1 tsp
Lemon juice 1 tbsp
Flour 2 tbsp
Gram flour 4 tbsp
Carom seeds ½ tsp
Oil for frying
Baking Soda 2 pinches
For Biryani Masala:
Onion (chopped) 1 (large)
Ginger garlic paste 1 tbsp
Yogurt ½ cup
Tomato 2-3
Lemon juice 2 tbsp
Biryani masala 2 tbsp
Salt, chili, turmeric as required
Mint leaves ½ bunch
Green chilies (slit) 6-7
Fried onion as required
Yellow color as required
Clarified butter 1 cup
For Rice:
Sela rice (boiled) ½ kg
Whole mix all spice 1 tbsp
Rose water 2 tbsp

Method:
Marinate fish with all the above ingredients for overnight. Then heat oil and fry until golden brown. Now in rice add salt, whole mix all spice and rose water. Boil and strain, keep aside. For the biryani masala, heat half cup clarified butter, fry chopped onion. Then add ginger garlic paste, salt, chili, turmeric and tomato. Cook well. Then mix biryani masala and yogurt, add to the mixture and cook well. Now add mint leaves, slit green chilies and lemon juice. Then in a pan add oil, water and half quantity of rice. Then add biryani masala, fried fish, fried onions and the remaining rice. Now in the water add yellow food color, cover and cook well. Once it is done place it out and serve hot.
