Kimjang comes late this season, December 3rd best time for Seoul

Koreans usually make huge batches of kimchi when the weather gets cold.
The low temperatures help kimchi ferment properly, but this year that time will come two to four days later than last year.
Korean weather authorities are advising people in Seoul to make kimchi on December 3rd, the 5th for those in Daejeon, while people in Busan should wait until January 4th.
Temperatures, they say, will be too mild before then.
Experts say the recommended dates for making kimchi is almost two weeks later than it was in the 1920s.
