Kaju katli, also known as kaju barfi, is an Indian dessert similar to a barfi. Kaju means cashew; Barfi is often, but not always, made by thickening milk with sugar and other ingredients. Kesar kaju katli is a kaju katli recipe that includes saffron.
Ingredients:
- 1 1/2 cup Cashew Nuts
- 90 ml Water
- 3/4 cup Sugar
- 1/2 tsp Cardamom Powder
- 2 tsp Rose Water
- Saffron Strands
- 2 tsp Ghee
- Ghee(greasing)
Method:
1. Grind cashew nuts in a grinder, and strain it, to get lump-free powder of cashew nuts
2. Now, in a pan add water, sugar; melt it on a high flame and add cardamom powder, rose water, saffron strands
3. Mix it; turn the flame to low, and add cashew powder
4. Now add ghee, mix it and cook it over a low flame, till gets thick
5. Grease a plate with some ghee
6. Now, with the help of some ghee, knead the kesar kaju katli dough and spread it over the greased plate
7. Let it cool down completely and cut it into diamond shapes
