This root vegetable is so versatile that it has more possibilities than there are colors in the rainbow. An added plus: potatoes can be your main course, a side dish, or just a small snack. If you're looking for the latter, this tasty recipe will bring an Asian-inspired, fresh-tasting snack to your table, with a pinch of cilantro and ginger.
You'll Need:
For the balls:
- 14 oz peeled, cooked potatoes
- 1 1/2 oz chopped onion
- 6 1/4 oz bread crumbs
- 1 tsp salt
- 1/2 tsp cumin
- 1 tsp freshly-chopped cilantro
- 1/2 tsp grated ginger
- 1 tsp flour
- 1 tsp chili flakes
- oil for cooking
For the dip:
- 1/2 cup plain yogurt
- 1 tbsp freshly-chopped cilantro
- 1 pinch salt
- 1 pinch sugar
- 3 tbsp mayonnaise
Here's How:
1. Mash the potatoes and mix them with the onion, just under half the bread crumbs, salt, cumin, cilantro, and ginger.
2. Pick out small portions from the potato dough and use your hands to shape them into small balls.
3. Mix a tablespoon of flour with water, and separately, add the chili flakes to the rest of the bread crumbs. First, dip the balls in the flour water and then roll them in the bread crumbs. Now fry them in hot oil, making sure to turn them so they are cooked all over.
4. To prepare the dip, just mix all the ingredients together.
