Hyderabadi Sheer Khurma is a traditional recipe which is a must make for the festival of Eid. It’s made using nylon vermicelli cooked in milk and dry fruits. Saffron is added to it for a unique flavour. Here is a step by step recipe of how to make Sheer Khurma at home. Sheer Khurma is a delicious sweet made using fine vermicelli and is loved all over India. The holy month of Ramadan is going on and Muslims all over the world are eagerly waiting to see the Eid ka Chand and break their month-long fasting with lots of celebration. I remember visiting my Muslim friends’ houses on the eve of Eid and gorge on the spread of delicacies which were served.
One thing that was made in every house was this Hyderabadi Sheer Khurma, rich with dry fruits, ghee, and saffron, the taste of this sweet still lingers on my palate. Ingredients:
1 1/2 ltr Milk (full fat)
1/2 tsp Green Cardamom Powder
1 tbsp Raisins (soaked)
For Frying Dry-fruits
2 tbsp Ghee
12 Almonds (peeled & Chopped)
50 gms Cashew-nuts (chopped)
4-5 Dates (soaked & sliced)
1 tbsp Chironji / Charoli
1 cup Vermicelli
7-8 strands of Saffron (soaked in Milk)
2 tbsp Pistachios (chopped)
3/4 cup Condensed Milk
Method: Let's start with taking the Milk (full fat) and boil them for 10 to 15 minutes then add Green Cardamom Powder and boil it for another 3 minutes on medium flame. After 3 minutes add Raisins (soaked) and let it boil for another 5 minutes. In the meantime Heat up the Ghee in the Kadai then add Almonds (peeled & chopped), Cashew-nuts (chopped), Dates (soaked & sliced), Chironji / Charoli & Vermicelli. Next let them cook till Vermicelli turn to golden brown color, now shut the flame and keep it aside. Next add strands of Saffron (soaked in Milk) into the Milk stir it and let it boil for 2 minutes. After 2 minutes add fried Vermicelli to the Milk with Pistachios (chopped) mix it together and let it boil for 2 to 3 minutes. After 2 minutes add Condensed Milk, then again boil it for another 3 minutes and your Sheer Khurma is ready to serve.
