Mumbai food in the summer season is incomplete without Aamras Puri. Now, this is one of the most favorite mango dishes and its finally back in season.

Ingredients:
For Aamras
Mangoes (payari)
½ cup Milk + Saffron Strands
5-6 tbsp Sugar (powdered)
Salt
½ tsp Cardamom Powder
½ tsp Ginger Powder
½ Nutmeg Powder
For Puri
1 ½ cups Wheat Flour
Salt
Carom Seeds (crushed)
1 tbsp Ghee
Water
Method: First, let’s cut the head of the Mangoes (payari) (as shown in the video), and squeeze it with the help of our hands. Next, we will open the skin of the mango and keep it aside, do the same with remaining Mangoes. Squeeze properly and take all the pulp from its seed. Next, add Milk + Saffron Strands into the Mango Skin, then squeeze it and take out rest of the remaining pulp from the Mango Skin. Next add this to the Pulp with Sugar (powdered), Salt, Cardamom Powder, Ginger Powder, and Nutmeg Powder. We now beat it nicely with the help of a hand blender.
Next, add Chopped Mango Pieces into Aamras and your Aamras is ready, take it out in a serving bowl. Keep it the fridge to chill, and in the meantime let’s make Puri’s for which heat up the Oil in the Kadai, next make the dough of the Puri for which add Wheat Flour in the bowl and add Salt, Carom Seeds (crushed) and Ghee. Now mix it properly together, knead it well-adding water during intervals and your Puri dough is ready. Knead this dough little hard (as shown in the video) add Oil to the dough and Knead it again nicely then cover it for 10 to 15 minutes. After 15 minutes start rolling your Puri’s , first take a small dough ball and roll it nicely. Now put the roll into heating Oil in the Kadai and fry them, do the same with remaining dough. Then your Aamras Puri is ready to serve.
