Hamburgers on the Otto Wilde OFB Grill
We know - most of the time when making burgers you just buy ground beef from the butcher and form the patties at home, sometimes you might buy the patties already formed… But if you want the ultimate burger, you’ll pick out the exact cuts you want, decide how much fat, and grind those burgers yourself!
Ingredients:
360g (.8 lb) beef brisket
360g (.8 lb) beef blade
Salt & Pepper to taste
Method:
Cube the beef into sizes that will fit into the grinder.
Place the beef cubes on a sheet tray, in the freezer for 10-15 minutes to make sure it is well chilled.
Mince them through the grinder on a course disk.
Mix the ground meat to even out the distribution of chuck, brisket, and fat.
Grind a second time on a finer disk.
Form four equal patties, careful not to over handle, or over compress.
Place in the fridge for a half hour or so.
Remove from the fridge and season both sides with salt and pepper.
Pre heat the Otto Wilde O.F.B. grill to 1500°F/900°C - takes about 3 minutes or so.
Place the patties on the grill grate and adjust the height to Meat-O-Meter level 2.
Broil the patties for 1.5 minutes at full temperature on both sides.
Then, lower to Meat-O-Meter level 5 and grill for another 2 minutes until they are medium rare.
