ALOO GOBHI TAHIRI\r

Ingredients\r

2 medium potatoes (aloo)\r
½ medium cauliflower (gobhi), separated into florets\r
1½ cups Basmati rice, soaked for 30 minutes \r
1 medium tomato, chopped\r
4-5 fresh coriander sprigs, chopped\r
2 tablespoons ghee\r
1 teaspoon cumin seeds\r
3-4 cloves\r
½ inch cinnamon stick\r
5-6 black peppercorns\r
1 black cardamom\r
Salt to taste\r
1 teaspoon red chilli powder\r
½ teaspoon turmeric powder\r
1 teaspoon garam masala powder\r
Chopped fresh coriander leaves for garnishing\r

Method\r

1. Heat ghee in a deep non-stick pan. Add cumin seeds, cloves, cinnamon, peppercorns, black cardamom and sauté till fragrant. \r
2. Add tomato and salt, mix, cover and cook till tomatoes turn soft and pulpy. Add potato cubes, cauliflower florets and drained rice and mix well.\r
3. Add chilli powder, turmeric powder, garam masala powder and salt and mix. Add 3 cups water, mix, cover and cook for 7-8 minutes or till rice is fully done. \r
4. Serve hot garnished with coriander leaves. \r
