Ingredients:-
For Litti:-
1 cup Wheat flour
1 tsp. salt
½ tsp. Carom seeds, crushed
¼ tsp. Baking soda
1 tsp. Ghee
5 tbsp. ghee for soaking
Chokha 3 ways:-
1 large Eggplant, charred
2 large Potatoes, boiled
1 Onion, chopped
2 large ripe tomatoes, charred
½ cup Coriander, chopped
1 tsp. Salt
1 tbsp. Mustard oil
Method:-
- In a bowl mix all the Litti ingredients together until breadcrumb consistency is achieved.
- Now add ¼ cup water and knead a dough.
- Make lemon-sized balls of the dough and bake at 200°C for 20 minutes.
- Peel the eggplant and tomatoes and transfer to a bowl.
- With the help of a fork, mash the vegetables lightly.
- Add 2 tbsp. Onion, 1 tbsp. Coriander leaves, to all the mashed vegetables, mustard oil, salt and mix well.
- Soak the baked Littis in ghee and transfer to a different bowl and soak for 15-20 minutes.
- Assemble and serve Litti Chokha as shown in the video.
