Shing & Derek Tam’s shop in Chinatown is an edible lesson. The father and son stretch, twist, and double a thick ring of malt syrup until it forms hundreds of thousands of silky white strands. Then they gingerly wrap hanks of the floss, resembling cotton candy but without the jarring sweetness, around a mix of toasted peanuts, sesame seeds, and coconut.
