Ingredients:-
For Avocado Puree:-
1 Avocado, scooped
½ Green Chilli, chopped
Mint Leaves
1 tsp. Olive Oil
Salt, to taste
Black Pepper, freshly ground
1 tsp. Lemon Juice
2 tsp. Olive Oil
For Chicken Patties:-
250 gms. Chicken Leg Mince
1½ tbsp. Soy Sauce
Salt, to taste
Black Pepper, freshly ground
1 tsp. Olive Oil
2 tsp. Mint Leaves, chopped
1 tsp. Lemon Juice
For Salad:-
½ Cucumber, deseeded and diced
1 Tomato, deseeded and diced
½ Onion, finely chopped
Red, Green and Yellow Bellpeppers, diced
2 tsp. Mint Leaves, chopped
2 tsp. Parsley, chopped
2 tsp. Olive Oil
Salt, to taste
1 tsp. Lemon Juice
Avocado Puree
For Serving:-
1 Avocado
Method:-
1. Pan fry the Avocado and transfer to a mixer/grinder bowl. Then add green chilli, mint leaves, olive oil, salt, black pepper powder and grind well to a paste. Add lemon juice and stir. Pour olive oil on top and refrigerate.
2. In a bowl mix the chicken leg mince with soy sauce, salt, black pepper, olive oil and mint leaves. Make thin patties of the mixture.
3. In a pan heat olive oil and pan fry the patties.
4. Squeeze lemon juice and turn the flame off and braise the patties with the squeezed juice.
5. In a bowl mix all the salad ingredients together.’
