Nigerian Moi Moi is one of the most popular Nigerian dish made from ground beans. It can be served as a main dish or a side dish. \r
Moi Moi can be enjoyed with either White rice, Jollof rice, Fried rice, Fried Plantains, Custard, Pap, Garri and the list goes on.\r

Ingredients:\r

1kg of pealed (oloyin) beans\r
1 medium sized onion\r
1 red bell pepper\r
1 scotch bonnet\r
100ml hot cooking oil \r
50-100ml fish liquid stick (depending on the thickness of the beans mixture)\r
1tbsp curry\r
1tsp thyme\r
2 stock cubes\r
1tsp salt\r
Butter (for coating foil bowls)\r
4 Hard boiled eggs (optional)\r
1 Boiled Fresh Mackerel (fresh/frozen  mackerel fish, 1 tsp salt, 2 stock cube, 1 tsp thyme, 100ml water)\r
