A. Glutinous rice dough \r

250 gram glutinous/ sticky rice flour\r
35 gram rice flour\r
30 gram caster sugar \r
5 gram muối\r
50 gram mashed potatoes or sweet potatoes, or potato starch\r
200 – 240 ml lukewarm water \r
300 – 400 ml oil for frying the rice balls \r

B. Filling\r

175 gram minced pork\r
50 gram carrot\r
18 - 20 gram glass noodles\r
3 dried wood-ears mushrooms/ black fungus (8 – 10 gram)\r
20 gram onion\r
5 ml oil \r
1/2 tsp salt \r

C. Salad \r
\r
300 gram green papaya, koralbi, carrot \r
20 gram caster sugar \r
10 ml/ 2 tsp lemon juice\r
½ tsp salt \r

D. Dipping sauce \r
\r
25 gram caster sugar \r
15 – 18 ml lemon juice \r
175 ml water \r
15 – 20 ml fish sauce \r
