My Birthday Cupcakes - Key Lime Cupcakes with Key Lime Filling and Key Lime Buttercream Frosting Tutorial\r

Recipe:\r
Cupcakes:\r
3/4 cup all purpose flour\r
1 cup self rising flour\r
mix together in small bowl and set aside.\r
In mixing bowl add:\r
1 stick butter (softened)\r
1 cup sugar\r
mix well.\r
Add 2 eggs\r
3 tablespoons of lime juice\r
green food color\r
mix well.\r
Alternate adding flour mixture and 3/4 cup buttermilk until well blended.\r
Add to cupcake tins. Bake on 350 degrees for 20 -25 minutes. Test with toothpick. When the toothpick comes out clean they are ready.\r

Key Lime Filling:\r
8 ounces of Mascarpone cheese, at room temperature\r
5 ounces key lime juice\r
1 can sweetened condensed milk\r
Place all ingredients in mixing bowl. Mix on low for about 30 seconds. Increase speed to medium for about 2 minutes. Place in small bowl and place in fridge to 2 hours. After your cupcakes are completely cool you can fill your cupcakes.\r

Key Lime Buttercream Frosting:\r
1/2 cup Crisco\r
1/2 cup butter (stick)\r
Mix until well blended.\r
Add:\r
1 teaspoon vanilla\r
1 tablespoon key lime juice\r
1 tablespoon milk\r
Mix well. \r
4 cups powdered sugar. Add slowly. Mix until the powdered sugar is well blended. Pipe onto cupcakes.\r
