DOUBLE BAKED STUFFED POTATOES\r

Preheat oven to 400 degrees. Rinse 2 medium potatoes well and pat dry. Brush each potato with oil and bake for 1 hour or until tender.\r

In large mixing bowl add.\r
\r
Potato Pulp (Reserve Potato Skins)\r
2 Tablespoons whipping cream\r
1 Tablespoon sour cream\r
1 Tablespoon butter\r
1 teaspoon salt\r
1/4 teaspoon pepper\r
\r
Whip until ingredients are smooth and creamy, 3-4 minutes. Fold in.\r
\r
1 Tablespoon chives (optional)\r
2 Tablespoons Cheddar Cheese\r
\r
Add mixture back into potato skins. Return to preheated 325 degree oven and bake 30-35 minutes.\r

Serve immediately.\r
