This is my take on Trinidad Red Preserve Plums, with this you can use mangoes, pawpaw, june plum, cherries etc. in place of the plums if you like\r

1 tbsp minced bandanya\r
chopped hot pepper\r
1 tbsp. minced garlic\r
1 1/2 tsp. sodium benzoate\r
1 tbsp. citric acid\r
1/2 tsp black pepper\r
3 tsp salt\r
1- 2 tbsp red food colouring - optional\r
5 cups of boiling hot water\r
