Indian cuisine is one of my favorite cuisine and this dish is so delicious especially this time of year that you see a lot of squash and pumpkin in the stores and just want to create many recipe as you can. You can substitute butternut squash with pumpkin or any other squash. They all taste delicious. It is very healthy and good for you. It is vegetarian, vegan and gluten free. It is has all the vitamins and protein that your body needs in addition to all the good healthy spices in it.

Ingredients:
1 tsp Cumin seeds ١ ملعقة صغيرة حبوب الكمون
1 tsp cumin powder ١ ملعقة صغيرة كمون مطحون
1 tsp coriander powder ١ ملعقة صغيرة كزبرة
1/2 tsp garam masala powder ١/٢ ملعقة صغيرة جرام مصلة
1/4-1/2 tsp hot red pepper ١/٤-١/٢ ملعقة صغيرة فلفل احمر حار
2 cups butternut squash ٢ كوب القرع الاحمر او اليقطين
2 cups chopped zucchini ٢ كوب القرع الاخضر
1 cup chopped tomato ١ كوب طماطة مقطعة
1 cup cooked chickpeas ١ كوب حمص مسلوق
1 cup chopped onion ١ كوب بصل مقطع
1 Tbsp grated ginger ملعقة كبيرة زنجبيل مهروس
1 tbsp grated garlic ملعقة كبيرة ثوم مهروس
1-2 tbsp hot green pepper ١-٢ ملعقة كبيرة فلفل اخضر حار
1 Tbsp tomato paste ملعقة كبيرة معجون طماطة
1/2 cup chopped cilantro ١/٢ كوب كزبرة
Salt and black pepper ملح و فلفل
Water, lemon or lime and oil ماء و حامض و دهن
Steps:
1-Heat about 3 Tbsp oil in a large pan.
2-Add cumin seeds and let them heat through until they sizzle.
3-Add onion,garlic, ginger and hot green pepper and cook for a few minutes until the onion is soft.
4-Add tomato and mix well then add tomato paste and cook for a minute.
5-Add all the spices and mix well and cook another minute.
6-Add butternut squash, zucchini and chickpeas and mix really good.
7-Add a cup or two of water depends on how much liquid you want in your stew.
8-Add salt and black pepper to taste .
9-Cover the pan and cook until the vegetables very soft but not mushy.
10-Finally add cilantro and a little bit or lemon juice or lime and mix well.
11-Turn off the heat and enjoy immediately with basmati rice or with bread.
