Ingredients:
1 medium tomato chopped
1 small onion chopped
1-2 garlic cloves sliced
1/4 cup parsley chopped
1-2 Tbsp hot green pepper chopped
1 Tbsp tomato paste
1/4 tsp curry powder
1/4 tsp cumin powder
1/4 tsp coriander powder
1/8 tsp red hot pepper or paprika
1 Tbsp lemon juice
salt and black pepper
2-4 pieces of tilapia fillet
oil
Steps :
-In a small pan heat about 1-2 Tbsp oil over low-medium heat then add onion, green pepper and garlic and cook for a few minutes.
-Add tomato and and all the spices and cook for a few minutes.
-Add tomato paste and lemon juice and cook for a couple of minutes.
-Add about 1/2 cup of water, mix and cover and cook over low heat for about 5-8 minutes until vegetables are tender.
-Finally add parsley and mix and cook for a minutes and the sauce will be ready.
-In a different pan heat a little of oil over low-medium heat then add tilapia fillet that are seasoned with only salt and black pepper. Cook for about 5-7 minutes on each site.
- For serving Scope a little of the tomato sauce on top of each fillet and along with white rice or white rice and vermicelli.
-You can also serve it with burghel, quinoa or with simple green salad and bread. Any way you like it :)
Note: the amount of spices is up to you more or less !
