Recipe for: Pak Choi & Pork Shiitake
You will need to soak the shiitake mushrooms before cooking if use dried products.
Ingredients:
500g Pak Choi
100g Lean Pork
100g Shiitake Mushrooms
6 Cloves Garlic
2 Tbsp Soy Sauce
0.5cm Ginger Root
Salt to Taste
1 Tbsp Cornflour & 30ml Water
50ml Chicken or Pork Stock
Method:
1. Finely chop garlic and ginger.
2. Cut mushrooms into small cubes, as small as you can (soak for 6 hours if use dried shiitake mushrooms).
3. Cut the base flat and remove the leaves off each pak choi.
4. Using scissors trim a petal shape on each stem.
5 Then remove the pistil from the centre of each pak choi.
6. Cut the pork into small cubes, as small possible.
7. Blanch the pak choi for 2 minutes in boiling water.
8. Remove and place under cold running water for a minute then drain.
9. Place the pak choi in a bowl, add half the garlic and pinch of salt then mix.
10. Add the pork into 2 tablespoons of hot oil and fry for 5 minutes.
11. Add ginger, the remaining garlic, mushrooms and fry for 2 minutes.
12. Add soy sauce, stock, salt and fry for further 2 minutes.
13. Stir in the cornflour mixture and cook for a minute.
14. Arrange pak choi onto a dish, pour pork and mushroom on top and serve.
