Are you looking for a quick and simple fasting recipe? Our chef Archana brings you the easy recipe of Ratalyachi Bhaji (Sweet Potato) in Marathi on Ruchkar Mejwani. This is a popular Maharashtrian upvas bhaaji / sabzi that can be eaten during lunch / dinner.

Ingredients:

4 Sweet Potatoes, boiled & chopped
2-3 tsp Grated Coconut
2-3 tbsp Groundnut, crushed
2-3 Red Chillies
1 tbsp Sugar
1 tbsp Ghee
1 tsp Cumin Seed
Salt to taste

४ रताळी, उकडून तुकडे करून
२-३ tsp ओला नारळ
२-३ tbsp शेंगदाण्याच कुट
२-३ सुक्या लाल मिरच्या
१ tbsp साखर
१ tbsp तूप
१ tsp जिरं
मीठ

Method:

- In a large bowl, add chopped sweet potato, grated coconut, crushed groundnut, sugar & salt. Mix everything well and keep it aside.
- In a pan, heat some ghee.
- When the ghee is hot add cumin seeds and red chillies.
- Then add the sweet potato pieces. Mix everything well. Coat the potato pieces with ghee and cumin seeds.
- Cover it for 5 minutes and let the sabzi cook on a low flame.
- Sweet Potato Sabzi is ready!
