Naem khao is a traditional Laotian salad made by breaking spicy fried rice balls into pieces and mixing it with herbs, peanuts and sausage. Chef Seng Luangrath says the dish, served at Bangkok Golden in Falls Church, Va., and Thip Khao in D.C., is popular because of the combination of flavors and textures.
