The Palak Chaat appetizer at Rasika is a flavorful mix of fried spinach topped with sweet yogurt and a tangy chutney. Executive chef Vikram Sunderam says when they figured out how to perfect the lightly-battered, flash-fried spinach, they knew they had a perfect dish.
