Ruchi Bharani is up with an extremely delectable and easy to make rice recipe. This rice is cooked with dry fruits and served with a delicious coconut milk curry.

Method:

To make curry:
- In a mixer bowl, add the chopped onion, chopped ginger, chopped garlic and chopped green chillies and grind them. The onion paste is ready.
- In a pan, add ghee, mustard seeds, curry leaves, asafoetida and the onion paste and saute all the ingredients. Cook well until the onion paste turns brown in colour.
- Add half the quantity of the coconut milk to the onion paste and mix well.
- In the remaining half portion of the coconut milk, add the cornflour and mix well to avoid lumps.
- Add this mixture to the curry. Then add little water salt to taste and coriander leaves to the curry.
- Add the boiled vegetables - cauliflower, carrots & french beans to the curry and mix well.
- At the end, add very little garam masala to the curry and mix well.
- Take the curry pan of the flame.

To make rice:
- In a bowl, add warm milk and saffron strands, mix it and let it soak for 5 minutes.
- In a pressure cooker, boil some water and place a flat ring.
- In a bowl, add the washed rice, 3/4th cup water, sugar, salt and saffron milk and place this bowl inside the pressure cooker over the flat ring and cover it with a lid.
- Do not put the vent valve for the pressure cooker. Instead, cover it with a steel bowl.
- Cook the rice for about 10 minutes on high flame and 10 minutes on low flame.
- After 20 minutes, spread the cooked rice on a plate and let it cool down completely before sauteing it with the dry fruits.
- In a pan, add ghee, few cinnamon pieces, cloves and the bay leaf.
- Then add the peanuts and let them tun slightly brown in colour.
- Add the cashewnuts, walnuts, pistachios, almond pieces and raisins to the pan. Once the dry fruits are brown in colour, add the rice to it.
- The dry fruits pulav is ready. Serve it with the coconut milk curry.
