Demi Lovato inspires me to make a hot envelope of cheese.
Ingredients:
• 2 Flour Tortillas (10 inch)
• 3/4 cup Cooked Chicken (pulled, shredded, or cut into bite-size pieces)
• 1 1/2 cup shredded Cheese (go with "Mexican Blend" or Monterey Jack + Cheddar)
• 1 tbsp. chopped Green Chiles
• 1 tbsp. fresh chopped Cilantro
• Serve with Guacamole, Salsa and/or Sour Cream

I thought making it onto a cooking reality show would be my ticket to culinary fame, but the whole experience was a disappointment. Since then I have quit my job in a commercial kitchen and decided to start making my own cooking show, QUICK MEALS. This is episode 10.
Home is where the heart is, and good food brings family and friends together around the table. That's what I'm all about and that's what I want QUICK MEALS to be all about.
Recipe:
You ask any American and they'll tell you the are loco for Mexican cuisine. That's usually just code for "I only like nachos and queso." But don't worry, I love traditional Mexican cuisine. This recipe is one that will appeal to both traditionalists and melted-cheese-loving donkeys. That's right, we're making Quesadillas.
Heat a frying pan (non-stick works great) that is large enough to accommodate your tortillas over medium heat. Then place one of your tortillas in the heated pan.
Sprinkle in your cheese, chicken, green chiles, and fresh cilantro. Spread those fixings out real nice and even. Then add another tortilla on top of all that good stuff.
Cook until the bottom is golden brown (about 3 minutes) and then flip and repeat.
Congratulations, you have yourself another quick and easy meal guaranteed to make your taste buds PAP!
